Charlene's dedication to freshness and flavor extends to every aspect of the brewery - from recipe development and ingredient sourcing to packaging and quality control. Even as Charlene has expanded the production capacity in order to share more of her beer with more amazing customers, she has strictly prioritized beer quality over growth - a focus that has led her to a self-distribution model built on freshness and meticulous care for the beer.
Many of the beers derive their vibrant character from delicate hop oils that are sensitive to heat, light, and time - just like fresh, ripe produce. Distributing her own beer allows her to protect this character by focusing on cold storage, super fresh delivery - in many cases days or even hours after the beer has been kegged - and partnerships with beer bars and growler fill stations that are just as dedicated to properly caring for the beer as she is.
Charlene now brews over a half dozen flagship beers plus many more rotating small batch specialties. For most small batch brewers, brewing as much beer as possible is not the main objective. Charlene's main objective is quality, research, and recipe development.
The term small batch at Badass Backyard Brewing refers to any batch less than 15.5 gallons in volume. Small batch brewing allows for variety. It allows Charlene to be able to experiment more with less risk. Also, she is able to brew a batch a little more quickly due to heating and cooling smaller volumes. In 2018 alone I brewed 122 new recipes!
Since opening the taproom in Spokane Valley in October of 2016 Charlene purchased a 3.5bbl system to keep up with the eight regular beers. The previous smaller system is being used strictly for educational purposes in trying new style experiments twice a week or more. This has allowed for new and different beer styles to be brewed by request of the customers, and also for an amazing amount of brew process development and improvement. Brewer and Owner Charlene Honcik currently has the capacity to brew three to four days a week to help supply the craft beer to the taproom and to the establishments that carry her beer in the greater Spokane area.
